Things are going really great for us. I am taking a Nutrition class online so that is keeping me busy. I am also still reading "New Moon". It is gradually getting better and easier to read but it still isn't as interesting as the first book. Mike is taking online classes right now Mon-Fri. He is keeping way busy. We have been going to work-out together on the weekends at the gym so that has been way fun spending time together. We usually go to play racquetball.
For dinner tonight we are having my delicious Sausage Soup with my sister Sheila's yummy bread sticks. If you get the chance you should try it sometime. Mike and I really enjoy it.
Sausage Soup
By: Heidi Taylor
2 cans of cream of mushroom soup= 1 can milk
2 cans of cream of chicken soup= 1 can milk
1 can of green beans with juice
1 can of corn w/out juice or 1/2 bag (quart size) frozen corn with juice
1/2 tsp. bay leaves
1 tsp. creole seasoning (to make the soup a little spicy; can find it @ Maceys) or salt
1/2 tsp. rosemary
1/2 tsp. pepper
1 can of pinto beans (rinse in sink)
1 roll of Tennessee Pride Sausage (mild or sage flavor)
2 medium size potatoes (diced)
1 small sweet onion
Cook sausage on med-hi heat until browned. Pat grease from sausage on a plate with paper towels. Put everything in the crock-pot and sausage once cooked on the stove. Cook on low-heat until potatoes are done. I normally put it in the crock-pot just before we go to bed and turn it off in the morning; cook on low-heat. Enjoy!
